    Campfire Fish

    The best part about cooking over a campfire is cooking something that you’ve caught.  Whether it be a deer that you’ve hunted, or turkey that you shot, or even fish that you fought, there’s something that just makes it taste better when you put the hard work into it. And since we are in the only state surrounded by water on three sides, fish are in abundance.  Here’s a great fish recipe to try after you next fishing adventure. 

    Campfire Fish

    1 stick butter
    4 potatoes, thinly sliced
    ½ cup fat free sour cream
    8 fish fillets of your choosing or your catch of the day
    ¾ tsp lemon pepper
    ¾ tsp salt
    ¼ tsp garlic powder
    2 tomatoes, sliced
    1 med onion, sliced
    ½ cup shredded mozzarella cheese
    ½ cup shredded cheddar cheese
    4 tsp parsley flakes

    1. Cut enough foil for each fish fillet
    2. Place a generous amount of butter in each foil sheet
    3. Place sliced potatoes evenly on the foil
    4. Brush each fish fillet with a thin layer of sour cream on both sides of fillet
    5. Sprinkle with lemon pepper, salt, and garlic powder
    6. Place the fish on top of the potatoes
    7. Lay tomatoes and onion on top of fish, as many as desired
    8. Cover with both kinds of cheese, and sprinkle on the parsley
    9. Seal each fillet in the foil and place on the hot coals, potato side down
    10. Cook thoroughly without overcooking, about 20 mins . 
    11. Then remove from fire, let cool and ENJOY!
